Our masculin So-CA icon of simple beach bakeries inspired by ocean waves, salt water and lots of sunshine. Rustic rye favourite of the sourdough revolution, aged for 36-48 hours. The long ferment destroys 95% of raw gluten, making it easy to digest even for those with mild gluten intolerance. The crust is dark and thick, the bread boasts a characteristic sour taste and an open internal structure. The large holes and the sticky texture pay tribute to the blessed activity of wild yeast.

It all started with these coffee cookies. We made the first 100 and quietly, Déryné opened its doors on a winter afternoon 17 years ago. By 6 pm that day they were all gone. This is our only unchanged recipe in 2 decades. By the way, they are Uma's favourites, too.
